Polo Professional Chardonnay


Grape variety: 100% Chardonnay

Region of Origin: Tupungato, Mendoza.

Vineyard details: alluvial soil and drip irrigation.

Climate: Dry and continental with great sun exposure allowing perfect ripening.

Vine cultivation: vertical shoot position trellising (VSP)

Harvest details: harvested between February 20th and March 10th. Hand picked in small cases. Yield: 10,000 kg/ha.

Vinification: grapes were destemmed and crushed. 100% cold skin contact before fermentation. Other techniques used: carbonic snow, enzymes and static free run. 50% of the must is fermented in French oak barrels for 20 days at 14-16ºC, and kept there for 4 months. The other 50% of the must is fermented in stainless steel tanks.

Pre-bottling operations: Plate filtration.

Colour: olive green with silver tinges

Aromas: expressive mixture of fruits. Fresh and young with elegant notes of vanilla and coconut.

Palate: fresh entry, unctuous and silky structure, balance acidity.

Alcohol content: 13.8 % Vol (20º C)

Total acidity: 6.1 g/l tartaric acid

Residual Sugar: 2 g/l

Serving Temperature: 12-14ºC / Cellar up to 4 years.

Enjoy it with pasta with seafood sauce, salmon omelette.
